Kochi's fish restaurant is particular about the way they grill their seared bonito. They use plenty of straw, and the smoke and aroma that comes from burning the straw adds a fragrant flavor to the bonito, further enhancing the inherent umami of the ingredients, making it a supreme dish. Furthermore, because they use seasonal bonito caught at the time, they are able to consistently provide high-quality straw-grilled bonito with a rich fat content, umami flavor, and sweetness, regardless of the season.
