    Yasushi Shibatayama (62nd Yokozuna, Onokuni)

He was promoted to the juryo division in the spring tournament of 1982, and to the makuuchi division in the spring tournament of 1983. In the Kyushu tournament of his first year, he made a great performance, defeating three yokozuna, Kitanoumi, Chiyonofuji, and Takanosato. In the spring tournament the following year, he swept the three yokozuna and three ozeki, and was awarded the Distinguished Service Award and the Fighting Spirit Award. After the Nagoya tournament of 1985, he was promoted to ozeki, and in the summer tournament of 1987, he won his first tournament with a perfect record. After the autumn tournament of 1987, he was recommended as a yokozuna. The following year, he won his second tournament in the spring tournament. In the same year, in the "last bout of the Showa era" in the Kyushu tournament, he put an end to Chiyonofuji's 53-game winning streak. In the Nagoya tournament of 1991, he retired at the age of 28. He became a toshiyori under his active name, and later took the name "Shibatayama." In June 1999, he opened the Shibatayama stable, and while he is currently working hard as a stablemaster to train apprentices, he is also active as a gourmet with the greatest sweet tooth in the sumo world, appearing on TV Tokyo's "The Original! Debuya" and other programs.

  • [Yokozuna] Kuzumochi, a rice cake with a long history.

    fig

Kuzumochi and tea set (eat-in menu) 1,100 yen (tax included)

This time, the prestigious Yokozuna title went to FUNABASHIYA 's original kuzumochi. This long-established shop has been around for 218 years since the Edo period, and there's even a legend that Saigo Takamori himself enjoyed it.

Of course, the master himself has eaten it many times, but the classics are still the best! It stands firm on a solid tradition, truly like a grand champion sumo wrestler.

    fig

"FUNABASHIYA 's kuzumochi is a real classic. The kuzumochi itself doesn't have much flavor, but it has a great texture and mouthfeel, and it's delicious no matter when you eat it. It's especially irresistible in the summer when it's chilled and topped with brown sugar syrup and kinako (roasted soybean flour)."

    fig

—To put it in sumo terms?

"That's the 'yorikiri,' the most fundamental winning technique in sumo. It's not flashy, but it's powerful. That's why it's been around for hundreds of years."

*Yorikiri... A technique in which a wrestler grapples with their opponent, gets close to them, and pushes them forward to force them out of the ring.

  • [Ozeki] A rich and flavorful "Carrot Polenta Cake" with a hint of spice.

    fig

Carrot Polenta Cake 600 yen (tax included) *In-store price. Monday to Friday (14:00-17:00) Order as part of a CAKE SET with a drink and receive a 100 yen discount.

Next up in the top rankings was the "uRn.chAi&TeA Polenta Cake" from "uRn.chAi&TeA" on the 2nd floor of COREDO Muromachi 3.

This is an original gluten-free cake carefully baked using corn flour and polenta from Hokkaido.

    fig

"I don't often get the chance to eat carrot cake, but this is good. It's moist and dense, almost like a terrine. It's simple but has a nice spice to it, and somehow it feels like it's good for you. Is the white part cream cheese? It would go well with a warm chai too."

    fig

—To put it in sumo terms?

"How about 'Defiance'? It's about taking the initiative with spices, creating a balance where the mellowness and spiciness intersect without being too close or too distant."

*Tsuppari... A technique in which the user repeatedly thrusts their open hand at the opponent's chest or throat, alternating between left and right.

  • [Sekiwake] Sweet happiness in one dish: "Waffle à la Minute"

    fig

Waffle à la Minute Specialité Chocolat: Single item: ¥1,430 (tax included) Coffee set: ¥1,980 (tax included) Tea set: ¥2,090 (tax included)

The third-highest ranked item is the "Waffle à la Minute Specialité Chocolat," which can be enjoyed at the café attached to "PIERRE MARCOLINI" on the 1st floor of COREDO Muromachi Terrace.

This dish offers a satisfying experience in both taste and volume, featuring freshly baked, chewy waffles topped with freshly made, silky-smooth chocolate and vanilla ice cream, and further enhanced with rich chocolate cream and whipped cream.

    fig

"The waffles aren't too sweet, so they go really well with the cream. I also like how the ice cream melts and becomes a sauce for the waffles. But above all, the chocolate itself is delicious—that's what you'd expect from PIERRE MARCOLINI."

    fig

—To put it in sumo terms?

"It's a battle of who can grab the other's hand right from the start. Vanilla and chocolate, ice cream and cream are competing on the waffle ring, and who will win? I guess the person eating it will be the referee."

*A struggle for the right arm... A struggle in which each fighter tries to get their dominant arm (the underarm arm) under the opponent's armpit.

  • [Junior Champion] A light and refreshing "Honey Lemon Jasmine Tea"

    fig

Honey Lemon Jasmine Tea: 590 yen (tax included)

The rank of Komusubi, which ranks alongside Ozeki and Sekiwake, was awarded to "Honey Lemon Jasmine Tea" from the Taiwanese tea drink specialty shop "HAPPY LEMON"!

Among the many customizable options available at "HAPPY LEMON," which allows you to combine your favorite tea with toppings such as tapioca pearls and salty cheese, this is one of the most popular menu items.

    fig

"I'm not sure if you can call this a dessert (laughs). But it's a new and delicious taste. I really love jasmine tea, and the refreshing taste of lemon combined with the natural sweetness of honey is just right. I think it's perfect for staying hydrated on a hot summer day."

    fig

"The simple yet delicious combination of lemon, honey, and jasmine is like a 'slam' that turns the opponent's momentum against you and quickly decides the match."

  • [Maegashira] Low-carb, gluten-free "Gateau Chocolat"

    fig

Low-carb, gluten-free chocolate cake: 550 yen (tax included)

tanitacafe, run by the comprehensive health company Tanita, is offering a low-sugar, gluten-free gateau chocolat, which is a specialty of the cafe.

While keeping the calorie count below 200kcal, which is considered just right for a snack according to the Ministry of Health, Labour and Welfare, it still offers a satisfying taste. It features a deep flavor and rich aroma, thanks to the use of "cocoa mass," which concentrates the nutritional value of cocoa.

    fig

"Gateau au chocolat is usually so hard that it's difficult to get a fork into it, but this one cuts easily. The texture is light and easy to eat, so you could easily enjoy it even after a meal. By the way, the Shibatayama stable also uses Tanita scales."

    fig

—To put it in sumo terms?

"It's a 'wrist throw.' In short, it's a desperate comeback technique. Rather than being in a solid stance, it's a move you make while being attacked, so this lightness comes into play."

    * Kotenage (arm throw): A technique in which you grab the opponent's arm from the outside and throw them by pressing down on them from above.

  • [Juryo (second division)] "Anko Butter Monaka" & "Pancakes"

Finally, we'll introduce two "Juryo" dishes that the master chef felt still had room for improvement and potential to become even more delicious!

    fig

Anko Butter Monaka (4 pieces): 1,300 yen (excluding tax)

"HOSHINO BUTTER" is a confectionery brand supervised by Teruzo Matsuyama, the owner of the highly-rated restaurant "Oryori Matsuyama," and features luxurious use of carefully selected butter.

The signature product, "Anko Butter Monaka," features carefully selected butter as the main ingredient, wrapped in sweet bean paste and mochi, and then sandwiched between monaka wafers just before eating. The combination of the crispy, fragrant monaka and the rich, melting butter is simply irresistible!

"The combination of red bean paste and butter is definitely a winner. Personally, though, I might prefer it if the butter flavor was a little stronger. Maybe I'll visit the restaurant 'Oryori Matsuyama' next time and tell the owner that directly (laughs)."
