At Uoya in Kochi, they pay special attention to the way they grill their seared bonito.
Using plenty of straw, the smoke and aroma produced when the straw burns add a savory flavor to the bonito, further enhancing the inherent deliciousness of the ingredients, resulting in a truly exceptional dish.
Furthermore, because we use bonito that is in season and caught at the time, we are always able to offer high-quality straw-grilled bonito with excellent fat content, umami, and sweetness, regardless of the time of year.
