Futaba Seimen, a Sanuki udon specialty store that focuses on the freshness of its udon noodles and the deliciousness of its freshly fried tempura, will open on the 1st floor of COREDO Muromachi Terrace in October 2024! It has already become bustling with many customers, but did you know that the store actually has two faces, one during the day and one at night?
Futaba Futaba Seimen is a udon restaurant where you can enjoy a great lunch during the day, and at night it transforms into a udon bar where you can enjoy alcohol with oden and other dishes made with carefully selected dashi. The restaurant is open from 11am and operates until 3pm, and the refreshing white curtain marks the spot! Last orders are taken at 2:30pm, so it's perfect for a late lunch.
Futaba Seimen Sanuki udon is made in-house every day using a noodle-making machine. It is made using only domestic wheat, water, and salt, achieving the delicious taste of "handmade" and "freshly made."
All the seats are at the counter, so you can enjoy watching the food being prepared in the open kitchen right before your eyes. You won't get bored even while you wait for your food.

This time I ordered the popular "Small Shrimp and Mitsuba Kakiage Udon," which consists of udon noodles boiled in a large pot in front of the counter and topped with freshly fried tempura.
This impressive bowl comes topped with a giant kakiage tempura and features the savory flavor of small shrimp and the refreshing aroma of mitsuba.Authentic Sanuki udon noodles have a chewy texture that only freshly made noodles can have, and a firm, chewy texture that goes perfectly with the clear, clear bonito and kelp broth. As you eat it, it combines with the tempura to create an even richer flavor.
You can choose between hot "kake" or cold "bukkake" udon, and for an additional 180 yen (tax included) you can get a large portion.In addition, we also offer a special set meal during weekday lunch hours that includes freshly fried tempura, freshly made udon noodles, and seasonal rice (or chicken rice). This is a rare restaurant in Nihonbashi area where you can enjoy a luxurious and filling lunch for under 1,000 yen!

Night business starts from 17:00! Hours of operation are until 22:00 (last order 21:30). The shop curtain has been replaced with a blue one.
Of course, you can eat the regular udon menu, but there is also a wide selection of snacks available only in the evening. You can enjoy your drinks with freshly fried tempura, chicken on the bone prepared in-house, and oden simmered in special broth.

On such an evening at Futaba Seimen, the first thing you want to order is the "Evening Drink Set." This is a great deal that includes freshly prepared chicken on the bone (yakitori or yakitori), and a drink of your choice.
The specialty of Kagawa Prefecture next to Sanuki udon is "bone-in chicken," a local delicacy made by grilling a whole chicken thigh with the bone. Just like in the original Kagawa, you can choose from two types: the firm and chewy "oya-dori" and the plump and tender "hinadori."
This time we chose the connoisseur's favorite, Oya Chicken and draft beer!The bone-in chicken is prepared in-house and grilled after an order is placed. It is seasoned with a punch of special spices and is hot and juicy with crispy skin.

Following tempura and chicken on the bone, Futaba Seimen 's specialty for dinner is oden.
We offer two types of oden: "Japanese dashi style" based on udon dashi, and our original "red and white broth chicken skewer." This time, we will be eating the red and white broth chicken skewer with the perfect Japanese sake "Mutsu Hassen Special Junmai."When the red and white soup chicken skewers arrive at your table, first remove the skewers and thoroughly coat the meat in the red and white soup. By assorting various parts of the chicken, such as the wings, neck, and thighs, you can enjoy the various delicious flavors of the chicken with every bite.
If you like, you can top it off with our secret spicy egg!
The robust flavor makes it perfect for drinking alcohol. Pairing it with the gorgeous and fruity "Mutsu Hassen" leaves a clean aftertaste that will have you eating away at it.

Once you've finished eating your chicken skewers, finish off with some porridge or udon noodles. Enjoy the red and white soup that's full of the delicious flavor of the chicken.
The udon noodles are of course soft and chewy, made in-house. I thoroughly enjoyed them and ended up full!
They also have a wide selection of snacks that you can only find at a udon specialty store, such as "dashi tamagoyaki" and "dashi chazuke," which use the udon broth, and they also have a wide selection of shochu and sake brands.
