Location: 1F POP UP area
Crispy on the outside! Juicy on the inside. Enjoy the texture and flavor of freshly baked focaccia.
This is the first location in the Tokai area, where you can easily enjoy the flavors of a Michelin-starred restaurant in Tokyo.
This texture is the result of a meticulously designed manufacturing process.
We use a unique blend of several types of wheat and meticulously control the moisture content and temperature.
Furthermore, slow, low-temperature fermentation promotes gluten development, resulting in a chewy texture and bringing out the inherent deliciousness of wheat.
During baking, humidity and temperature are carefully controlled to create a crispy exterior and a robust texture.
The inside is juicy and filled with the elegant aroma of the finest Italian olive oil.
This focaccia is made by Chef Hirayama, who leads "ALTER EGO," a restaurant that has earned one Michelin star.
After honing his skills at Michelin-starred restaurants in Italy, he opened ALTER EGO and earned a Michelin star in just one year.
This restaurant has gained high acclaim for its cuisine that reimagines seasonal Japanese ingredients using Italian techniques.
We want people to enjoy the quality that can normally only be experienced at this shop, more often in their daily lives.
This focaccia was created from that sentiment.
