Hokkaido herring... In Hokkaido, it is called "haru-tsuge-uo" (spring message fish) and is a fish that represents spring. It is very fresh and has a moist, juicy taste.
White Mt. Fuji Salmon from Shizuoka Prefecture - A rainbow trout characterized by its moderate fat content, raised in Inokashira Spring Water and at a farm upstream of the Shiba River.
Conger eel simmered in bone broth (sakura salt) - Live-caught conger eel slowly simmered in broth extracted from the bones of the eel. Incredibly plump and tender, this is a delicacy that boasts the deep umami of the conger eel itself.
