New product "Yuzu Negi Mentaiko" to be released!!

Starting July 18th, 2026 (Saturday), the premium mentaiko series "Hakata no Aji Yamaya no Yuzu Negi Mentaiko" will be available for a limited time at all Tsukiji GINDAKO stores nationwide (excluding some stores).

"Hakata no Aji Yamaya no Yuzu Negi Mentaiko" uses aged spicy mentaiko that has been carefully marinated for 168 hours (7 days) in Yamaya's "Takumi no Tare" pickling liquid, which has been preserved since the company's founding, concentrating the umami into each individual grain. Based on a special GINDACO ratio mentaiko sauce that retains the excellent texture and rich flavor of this spicy mentaiko while being perfectly matched with Gindaco's takoyaki, it is combined with crisp and flavorful Kujo green onions, topped with white sesame seeds and shredded nori seaweed. Furthermore, a special yuzu sauce developed for finishing just before eating is provided in a small packet.
By drizzling the "special yuzu sauce" over the dish just before serving, the refreshing acidity and elegant aroma of the "Kito yuzu" are further enhanced.
