New! Yamada Kogyo's Blue-glazed Hammered Chinese Wok

Just rinse it with hot water and you can start using it right away without the hassle of seasoning!
Yamada Industrial Co., Ltd.'s "hammered wok" is made by hammering a flat iron plate approximately 5,000 times and shaping it into a round shape.
This manufacturing method is only used by Yamada Kogyosho in Japan. Yamada Kogyosho Hammered Chinese Wok (1.2mm 24cm) This is the regular version of the "hammered Chinese wok" made by hammering black iron.
About 10 pots are stacked and hammered together to make the pots, and the pots stacked on top will have hammer marks left by the hammering.
This time, we asked them to create a "blue print" version as a special original for COOK & DINE HAYAMA.
Just like our original frying pan "AOM," the entire pan is cooked at high temperature until it becomes bright red.
This creates a beautiful, glowing blue coating like this.
This blue coating is called an "oxide film" and makes it less likely for rust to form.
The inside of the iron kettle is also a similarly bluish color. The iron kettle body is also heated red hot after being removed from the mold to create this oxide film. (For Iwate's Nambu iron kettles, this process is called "kiln firing.")
By applying this oxide film, the initial seasoning (applying oil and baking at high temperature to bake in the oil film) is no longer necessary. So, after just washing it with hot water, you can start using it right away without having to go through the trouble of seasoning it!
After blue-glazing, the piece is finished by applying edible vegetable oil.
The handle has the COOK & DINE HAYAMA logo. When you start using it, a black oily coating will burn onto it, just like the AOM. After years of use, the coating will spread from blue to black. This is what it means for the iron pot to grow. Use it as much as you can and let it turn jet black.
