"Toraji Shokudo" started when Yakiniku Toraji, a yakiniku and Korean restaurant, wanted to create a popular TORAJI SYOKUDOU that could be used every day and focused on food other than yakiniku. The reason for naming it "TORAJI SYOKUDOU" is that we wanted to appeal to the public that even though it is a restaurant run by Yakiniku Toraji, it is a restaurant that is easy to enter and has a low threshold.
The menu at "Yakiniku Torajji" will feature the incredibly popular Korean classic "stone-grilled bibimbap" as the main dish, but will also offer new dishes with Torajji's playful twist, such as "stone-grilled bibimbap with plenty of vegetables" and "stone-grilled bibimbap with melted cheese," which use plenty of vegetables.
So, inspired by a simple question that has long plagued us: "Why doesn't Korea have authentic noodle dishes (ramen) like those in Japan?" and the idea that "If Toraj made Korean ramen, how delicious would it be?", we decided to make and serve ramen as an authentic Korean dish.
Since it is made by "Toraji", the ramen soup is naturally "beef bone soup". We have two types, clear soup (chintang) and white soup (paitan). Korean food "Yakiniku Toraji" has also offered soup made from beef bones and tails, such as Yukgaejang noodles and Gomtang noodles, but this was the first attempt to combine the soup with a "sauce" like Japanese ramen.
There are four types of ramen: "Wagyu Beef Soba" with plenty of beef belly, "Tasty Spicy Beef Kalbi Noodles" with a rich spiciness and flavor, "Beef Salt White Soup Noodles" with beef tongue balls (meatballs made from beef tongue), and "Toraji Spicy Oil Soba" which is a soupless ramen.
