Kaneko Hannosuke was a real person born in Asakusa, and a leading figure in the world of Japanese cuisine who believed that "Japanese culture lies in food" and loved Japanese cuisine more than anyone else.
The Enma-cho (recipe book) passed down to Kaneko Shinya, the grandson of Kaneko Hannosuke, contains the recipe for the closely guarded "secret Edomae donburi sauce."
Using this secret recipe for the bowl sauce, and after much trial and error, the tempura bowl was finally completed. It was a bold appearance that embodied the refined Edomae style. With the desire to allow many people to enjoy this Edomae tempura bowl at an affordable price, Nihonbashi Tendon Kaneko Hannosuke was born.
