This rice accompaniment is made from carefully selected domestic soybeans and rice koji, slowly aged in a traditional raw soy sauce sauce, and then topped with Yaizu bonito flakes. Use it in place of soy sauce in a variety of dishes. It pairs particularly well with raw egg on rice. It's also great as a topping for tofu, rice balls, or seasonal vegetables, or as a seasoning for stir-fries.
