Utilizing Western cooking techniques, they use a demi-glace sauce that takes over five days to prepare as the base flavor, along with their own unique blend of spices carefully selected for their aroma, and the sweetness of vegetables and fruits.

Our original spice blend, inspired by Mikasa Kaikan's traditional Indian curry, places particular emphasis on "aroma." By preparing each dish to order, we enhance the aroma of the spices, allowing you to enjoy a lingering, multi-layered aftertaste.

As the head chef of Mikasa Kaikan, he has carried on the traditions of Mikasa Kaikan for many years, and currently, while in charge of culinary development, he also plays an active role as an advisor for new businesses.
