This is the first food court shop of the popular Udon University, an udon izakaya with a shop in Akasaka, Chuo-Ward, Fukuoka. Udon University uses only wheat from Itoshima, Fukuoka Prefecture, in its noodles, giving them a firm and chewy texture. Their soup is rich in umami flavor.
An evolved Hakata version of udon that was eaten in an area of Kitakyushu, Fukuoka Prefecture. The specialty dish, “Niku-Niku Udon,” is known for its black soup made of golden seafood and beef broth. It is served with salty-sweet diced beef on top of noodles chosen for their thickness and texture. Adding a generous amount of ginger is recommended.
