"Firewood-grilled spring cabbage" A quarter of a spring cabbage, now in season, is luxuriously grilled over a wood fire. By grilling it all at once over a wood fire, we maximize the spring cabbage's unique soft texture all the way to the core and its bursting with juicy sweetness. Topped with fragrant anchovy butter and a generous amount of Parmesan cheese.
This dish is perfect as a snack with alcohol or as an accompaniment to a main dish.
