| Brand Concept | Founded in 1947, Yabatan, a restaurant specializing in Nagoya's famous miso katsu, has continued to maintain its distinctive flavor by "never cutting corners" since its founding. The pork used is from southern Kyushu, which is tender and flavorful. Because the fresh meat is carefully cooked at each store, it is surprisingly tender even without pounding. The miso sauce, which is the key to the flavor, is made using soybean miso that has been naturally fermented for a year and a half. It is made by hand by our in-house miso craftsmen, with just the amount needed each day, and the sweetness of brown sugar and pork stock added. The breadcrumbs are a unique blend of dried and fresh, which allows for good drainage and a crispy texture. The frying oil is a blend of salad oil and lard, resulting in a light finish. In addition, you can enjoy the aroma and realism of the performance in which hot miso sauce is poured over the dish just before it is served. All of this is to provide you with the "best misokatsu."
