This lightning-fast okonomiyaki features plenty of vegetables, fragrant shiso leaves, and soft noodles wrapped in two eggs in an omelet-like shape in a dome shape. All of this is packed with the attention to detail needed to ensure you can enjoy Hiroshima's soul food to the fullest.
Many people may think that the "double egg" is different from the typical Hiroshima okonomiyaki because it looks almost like an omelet. The dome shape encases the vegetables, and cooking it without pressing down results in a fluffy finished product.
The noodles are made with the famous Isono Seimen's noodles, made specially for okonomiyaki. They are boiled thoroughly in a hot water bath and then lightly grilled on a hot plate to make them soft without being crispy, which is the lightning-fast method. The shiso leaves are not left whole, but are finely chopped before being placed inside, which in turn infuses the flavor throughout the okonomiyaki.
The sauce is, of course, Otafuku sauce from Hiroshima, so you can enjoy the flavor and aroma as it is without any blending.
