A refreshing lemon cream is sandwiched between fluffy almond-flavored dacquoise layers. The gentle sweetness is followed by a refreshing burst of lemon flavor.

We used lemon zest and lemon chocolate in the dough to bring out the refreshing aroma and tartness of lemon. These are crisp, sweet and sour lemon cookies.
