It all started from one food stall.

Seiyoken, founded in 1952, is the third oldest ramen shop originating from a food stall in Kurume, having been in business for over 65 years. It quickly became the most popular ramen stall in Kurume and became legendary. The first owner, Hiroshi Kazuki, is also the creator of the crispy deep-fried pork back fat that goes into traditional Kurume ramen.
Due to the changing times, Seiyoken was closed for a time, but thanks to the support of fans who wanted it to return, it was revived in 2009. It has now grown into a restaurant that is visited by over 500,000 customers a year.
After that, following the main store in Suwanocho and the Bunka-gai store in Kurume, they expanded to Ogori and Yanagawa, and currently have four stores. Now, they are said to be the tonkotsu ramen store that represents Kurume. In addition, Seiyoken is attracting attention as the one that started the trend of "Kurume fried rice" amid the nationwide fried rice boom.

Seiyoken's ramen soup is made only from water and pig heads. No extraneous ingredients such as fat are added, so the skill of the chef is essential. While regular tonkotsu ramen is made every day using only the amount of soup needed for that day, our restaurant uses a "add-on" method to make "vintage soup," adding new soup every day to the large pot used in the restaurant as needed, and blending it with the chef's intuition and skill. Years of aging increase the richness and mellowness of the soup, creating a unique flavor without any unpleasant taste.
The noodles are authentic homemade noodles, carefully made by skilled craftsmen using carefully selected wheat that matches perfectly with the matured soup.
The ramen gets tastier with every slurp, with a fine taste that allows you to drink up the soup to the last drop. This is the ultimate bowl of traditional Kurume ramen that has been passed down since the food stalls of the Showa era. That is Seiyoken ramen.
