A sake sales event for "Suien," a sake brewery that practices traditional sake brewing while working in harmony with the seasons, located in the blessed natural environment of Azumino, Nagano Prefecture, at the foot of the Northern Alps.

EH Brewery, the producer of "Suien" sake, which brews sake in harmony with the seasons amidst the blessed natural environment of Azumino, Nagano Prefecture, at the foot of the Northern Alps, will be holding a limited-time sake sales event for three days.
Founded 215 years ago in Azumino, Nagano Prefecture, despite being deep in the mountains, Azumino is a spacious and bright area with a cool and refreshing climate, long hours of sunshine, and many clear, sunny days.

Just beneath the ground, the meltwater from the Northern Alps, gushing down from altitudes of up to 2,500 meters, awaits its moment to spring forth. In Azumino, an ideal location for sake brewing, we carry on tradition and dedicate ourselves wholeheartedly to producing delicious Japanese sake. In addition to the finest sake rice "Yamada Nishiki," we use Nagano-grown sake rice "Miyama Nishiki" and "Hitogokochi," cultivating them with the passion to make delicious sake, and these have now become indispensable ingredients in EH Brewery's sake brewing. Sake brewing is a very delicate process.

For example, even with the same type of sake rice, the moisture content and other factors can differ slightly, and humidity and temperature also change. Therefore, based on past data, it's necessary to create conditions that are conducive to the activity of yeast and koji mold. To achieve this, one needs to have a certain level of scientific understanding of how these processes work. It's not simply a matter of relying on experience and intuition. However, in processes like koji making, which greatly influences the taste and aroma of sake, the experience of the master brewer, which cannot be measured solely by scientific data, is invaluable. The master brewer communicates this experience to all the brewery workers, fostering close communication and incorporating it into the sake brewing process.
