Kaneko Hannosuke leading figure in the Japanese cuisine society and chairman of the chefs' association, was an Edokko who loved the downtown area and Japanese cuisine more than anyone else. The founder, who is the grandson of Kaneko Hannosuke, received the Enmacho recipe book from his grandfather when he was a child. In it was a recipe for the ``secret Edomae donburi sauce'' that was not shared with anyone outside the company, and after much trial and error to find the right topping (ingredients) to go with this donburi sauce, he finally completed a bowl of tempura bowl.
