This "tsukemen specialty restaurant" opened in 2005 and has expanded to many locations mainly in Tokyo. It serves "rich pork bone and seafood soup" made by combining pork bone and chicken soup simmered over high heat with fish stock that has concentrated the flavors of dried sardines, bonito flakes, and mackerel flakes. It uses specially selected TETSU flour "TETSU-102" to create "the ultimate noodles" that have a wheat aroma and a chewy texture. Please enjoy a bowl that is rich yet not too heavy.
