Tokyo Nikusoba Tsururi Tsururi is a restaurant that breaks away from the traditional Japanese soba culture, offering dipping soba with a novel and original appearance and generous portions.
The soba noodles are our original medium-thick noodles. After boiling, they are thoroughly chilled in cold water, resulting in a delightfully chewy texture and firm bite! The rich dipping sauce, flavored with dashi broth, is complemented by our homemade chili oil. Adding a raw egg for a change of pace is a surefire way to enjoy it. This is an evolved version of tsukemen (dipping noodles) that transcends the conventional concept of soba.
